My nephew, Kayden, turned 2 in February. To celebrate his birthday, he had a Cars themed party and this is the cake I made for him. My sister wanted the cake to be low in sugar, so it is made with a natural sweetener called Agave nectar. The frosting was also to be low sugar, so it was made from cream cheese and Agave nectar. This made it a little more difficult to work with since it got soft rather quickly, but all-in-all, I think it turned out pretty cute!

I had to comment again. Kayden saw his cake and went up to the computer screen going "om, om, om" pretending to eat it. He remembers how yummy it was. =)

Okay, so you forgot to add that it was whole wheat to boot. It was very yummy and I didn't have to worry about the dreaded low my kids feel from sugar. I'm reading a really good book right now entitled, "Little Sugar Addicts". Very informative and enlightening. It makes perfect sense too, some kids are sugar senstive and some are not just like some people are prone to be drug addicts, shopaholics or alocholics. The concept and reaction is the same just different "highs".
